Top Tips for Beginners:

Barbequing is a slow cooking method. You can’t rush it. Relax, have your beer or wine and allow the indirect heat of the coals to do their job.

First timer: Cooking your meat to a tender moist finish is the soul of good BBQ and the most important thing.

As you become more familiar with barbecuing, you can experiment with herbs, bastes, marinades rubs, etc.

The coals: Don’t cook over the coals for long periods of time: this will dry out your meat and it won’t be cooked evenly throughout. Putting your meat directly over the coals should be done very quickly – long enough to only sear both sides.

Set your coals to cover no more than 1/3 –1/2 of your grill.

The food: Marinate or mop food with liquid seasoning to retain the moisture in food and keep it from burning. Remember, the temperature of a charcoal BBQ can be very intense. For great results you must frequently mop your meat or vegetables.

Safety: Cook meat safely so that food poisoning organisms are killed. The centre of the meat must reach a core temperature of at least 72C.

Cleaning: Soak the cooking grill and tools in hot soapy water as soon as possible after use.

The Branston name comes from a small village south of Burton-on-Trent in Staffordshire. It was there in 1922 that Crosse & Blackwell first produced the famous pickle and created what would become a classic British brand. Today, it is still made to the same secret recipe and by the same traditional methods, blended to perfection for that unmistakable kick. The essence of Branston is it's 'Tang' which brings food to life through a unique combination of tanginess, sweetness, crunchiness and spiciness. It's this tang that gives the brand a host of famous fans including Catherine Zeta-Jones and Naomi Campbell.

Since it's launch in 1922 Branston has been a firm family favourite. Branston Original is the most well known product in the range. However new to the range for summer 2005 are 3 new tasty relishes, ideal for summer BBQ's. These include Hot Chilli & Jalapeno Relish, Sweet Onion Relish and Tomato and Red Pepper Relish, ideal for summer dining.
